Mango Nice Cream Madness

 
Personally, I can’t live without ice cream. However I never used to eat a lot fearing that it would make me fat. Since going vegan, it’s all I eat. Making ice cream out of fruits is the simplest and most fun way.
Ingredients (serves 2):

  • 1 frozen mango (at least overnight, chopped into smaller pieces)
  • Handful of walnuts (the crunchier  the best!)
  • 2 dates
  • 1 banana
  • 1/4 cup of rice milk (or coconut milk)
  • 1 tbsp agave syrup
  • Sprinkle of chia seeds

Directions:

  • Take the mango out of the freezer and let for 3 minutes (so your blender doesn’t break)
  • Put the mango pieces and the banana in the blender (it is very important that you cut it into small pieces, otherwise it will take more time to form the creamy texture)
  • Add the dates
  • Blend for a couple of minutes, until it has a yougurt texture
  • Add the milk, agave syrup and the walnuts
  • Blend until it has the ice cream smoothness, don’t blend too much after that point, because it will start melting
  • Divide equally on two bowls
  • Sprinkle chia seeds and add more agave syrup if you want
  • Enjoy!
