If anyone ever actually enters this blog/ or my instagram, they might be asking “yeah but what is she actually doing in Indonesia other than eating delicious vegan food and taking selfies with monkeys” if so, here is you answer: These cutie pies captured my attention while we were on a “typical Bali house tour”, I’m guessing they were the neighbors. They immediately smiled and posed for me. So sweet and sincere. Vegan (I’m assuming) Balinese Cat munching on rice rolls, belongs to the owners of the house. On the way to the fruity heaven: BALI

  1st of July, 21.21: Up in the air, on our way to Doha, Qatar. Has been a nice trip except for the fact that the company forgot to prepare me a vegan meal so I had to wait while snacking(!) on a breadloaf, onions and tomatoes while the kind but lightheaded host managed to confirm to me that the vegetarian vegetable plate was vegan, though I’m quite convinced that there was butter on the potatoes. Tried to drink as much water as I could, but really craving a green juice at the moment, though doubting that I’ll find any in the Doha Airport (where we will wait for 4 hours, gulp.) Banana Bread Muffins

   Ingredients: 250 gr gluten free flour 1 package baking powder Handfull of walnuts 2 bananas Splash of coconut milk 70 gr olive oil Agave syrup (to taste) Cocoa powder Method: Mash the bananas with the oil and the syrup Add all other ingredients except for the cocoa powder When the dough is ready, divide into two equal bowls and add the cocoa powder to one Put one spoonfull of each in the muffin case Bake until toothpick comes clean Dig in.

Carrot Chocolate Cookies

  Ingredients: 2 bananas 1 carrot Cinnamon (to taste) Agave syrup (to taste)  2 tbsp peanut butter 1 cup oats 3 tbsp coconut milk (until the texture is slightly moist) Method: Grate the carrots, add the bananas and mash together Add the coconut milk, cinnamon, peanut butter and agave syrup and mix together Mix until almost homogene With the help of a spoon make 12 cookies on a tray/baking sheet Bake with 180• for 10 minutes For the icing: Ingredients: (double them for more sauce) 1 tbsp cocoa powder 1 tbsp peanut butter Some agave syrup (as much or less as you want) 1/3 cup coconut milk Dash of cinnamon Method: Mix all ingredients in a bowl Pass to a saucepan Cook until boiling and bubbles appearing With a spoon, divide equally and pour over…

Ingredients: 4 tbsp oats 100 ml coconut milk One carrot, grated One ripe banana Agave syrup 1 tbsp peanut butter Method: Grate the carrots and add the banana, mash together Add the mash with the rest of the ingredients to a medium saucepan Cook until boiling/ has a creamy texture Enjoy.
